Southern Australian Wine on the Water Tasting with Unico Zelo Wines, 4/16

Join us this Wednesday as we travel to Southern Australia for a tasting featuring Unico Zelo Wines. 

Founded by Brendan and Laura Carter, Unico Zelo is known for producing vibrant, sustainable wines using Mediterranean grape varieties well-suited to Australia’s climate. Brendan and Laura have become one of the most dynamic winemaking duos in the Adelaide Hills, crafting Italian-inspired, textural wines that reflect a strong sense of place. Their winery focuses on sustainable, minimal-intervention practices and drought-resistant Mediterranean varieties.  The result is a lineup of expressive, energetic wines that celebrate individuality, natural balance, and environmental stewardship.


 Jade & Jasper – Fiano

  • Grape: Fiano
  • Region: Adelaide Hills
  • Tasting Notes: Crisp, saline, with floral and almond undertones. Balanced acidity with textured minerality.
  • Food Pairing:
    • Grilled prawns with lemon & garlic
    • Caprese salad with buffalo mozzarella
    • Fennel and orange salad
    • Fried calamari 

Jungle Jungle – Dolcetto

  • Grape: Dolcetto
  • Region: Adelaide Hills
  • Tasting Notes: Juicy maraschino cherry, black plum, soft tannins, fresh acidity. Bright, fruit-forward.
  • Food Pairing:
    • Pork belly bao or duck pancakes
    • Tomato-based pizza or pasta (e.g., arrabbiata)
    • Chargrilled sausages or burgers
    • Korean BBQ short ribs

Pollen – Gewürztraminer

  • Grape: Gewürztraminer
  • Region: Clare Valley
  • Tasting Notes: Rose petal, lychee, ginger, and clove. Perfumed, spicy, off-dry and textured.
  • Food Pairing:
    • Thai green curry or Vietnamese lemongrass chicken
    • Moroccan tagine with apricots and almonds
    • Aged Gouda or soft Brie
    • Sushi with pickled ginger

Truffle Hound – Red Blend (Barbera, Sangiovese, Nebbiolo, Merlot)

  • Region: Clare Valley & Adelaide Hills
  • Tasting Notes: Bright cherry, amaro herbs, soft tannin structure, with a savory finish. Inspired by Piedmontese reds, yet easy-drinking.
  • Food Pairing:
    • Truffle mushroom risotto
    • Pepperoni pizza or eggplant parmigiana
    • Salumi, prosciutto, and aged cheeses
    • Roast lamb with rosemary and garlic
